Bacon Pancake Brunch

As I’ve previously mentioned, at length and with feeling, I love meal planning. It’s saved me more money than I can even fathom, and it’s how I can control how healthy (or unhealthy) I’ll be eating from one week to another. I plan for every dinner to be a double batch, so that lunch is already made for tomorrow- and I portion out the lunch amount into tupperwares before digging into the dinner to avoid going back for thirds and eating tomorrow’s lunch accidentally (it’s happened before, it’s fine, I’ve forgiven myself, everything is ok).

I decided that I’d like to start posting my meal plans occasionally to give you all some ideas of what to eat on regular weekdays. If there’s something that you want to know how to make, don’t hesitate to send me a message (through Facebook or email). I love writing out recipes for people, and if something gets a couple of requests, I’ll write a post about it!

You’ll notice that there’s little to no meat on the meal plan, and that there’s an abundance of veggies, rice, and beans, and that’s because I’m trying to keep food costs super low- down to about $50 per week, total, for two people.

This is two weeks’s worth of meals- the first half is this week’s plan, and the second half is for next week. Also, sometimes a smoothie isn’t enough for my breakfast so I’ll add a fried egg. Coffee also goes without saying.

The May 1st- May 12th meal plan:
